The California Restaurant Association worked closely with state and local regulators, as well as representatives from the retail food industry and the California Conference of Directors of Environmental Health, the California Department of Public Health, the Retailers Association and the California Hotel and Lodging Association to develop guidelines for the California Trans Fat Ban. Without going through the formal regulatory process, these guidelines serve to provide uniform enforcement standards across county lines. The California Conference of Directors of Environmental Health has approved these guidelines, providing them to their association of local regulators, creating an informal agreement that local regulators use these guidelines in enforcement.
